On December 5, 2005, Damien D’browes dream evolved from a vision to the grand opening of the large glass doors into the modern and cosy atmosphere that is D’browes Restaurant.
It had taken Damien three years to decide on the venue at Boolimba Crescent in Narrabundah, chosen because of Damien’s perceived need of such a restaurant in Narrabundah, as well as the easy parking and large windows facing the street.
The atmosphere shifts easily between lunch and dinner, thanks to the glass front inviting in the sun for lunch goers; and the subtle candlelight which sets an intimate scene for diners to enjoy a fine dining experience. D’browes is open for Lunch and Dinner from Tuesday to Saturday – Sunday and Monday by appointment.
The menu is European-based with a strong Asian influence, with ever-changing specials chalked onto a blackboard- painted archway separating the main dining area from a separate function room.
A must to try is the Ossu Bucco, a favourite of the Chef, a veal shin braised for three hours in a sauce based on garlic, lemon zest and parsley.
Damien grew up in restaurants; helping his father at the Alpine Hotel in Thredbo from a young age. He always knew hospitality was the industry he would eventually establish himself in. Damien D’browes made his name in Canberra by working as the head chef of Marinetti’s in O’Connor and running his own catering business, Gastronomy.
The décor is an eclectic mix of classic restaurant tradition, complimented by Phillipe Starck replica chairs and stamped with Damien’s own taste. The tablecloths are all linen, in traditional style.
A still life painted in 1901, adds understated drama to one wall. Painted by an artist named Harrison, it left its birthplace of Munich for England, before coming to rest in D’browes 105 years later.
