It’s back!

If the permanent home for Frugii ice-cream wasn’t awesome in itself, this week owner John and the team have announced the return of their Truffled Ice Cream.

The best place for truffles to grow in under the frosty grounds around Canberra, so it’s fitting that the funky fungus be turned into an ice cream! This is the fifth year in a row that john has prepared the winter treat, and this time it’s better than ever.

John is pretty excited by this year’s creation. “I’ve taken a new approach by micro-planing the truffles this year. It means we get a lot more surface area on the truffle particles, so the ice cream mixture absorbs the flavour more readily. Also, as the truffle is more refined, it feels more a part of the ice-cream, rather than being a little bit grainy like it was last year. This time, we’ve got a more rounded finish without any ‘hotspots’.”

The truffles are as fresh as can be, and are sourced from local producer Blue Frog Truffles. The flavour is not as strong or overpowering as you might have experienced when engaging with shaved or whole truffles. By using a 1:100 mix, the pungent truffle is balanced beautifully with its vanilla ice-cream. It’s truffle, but not as you know it!

The truffled ice-cream is available now from the Frugii store in the Ori building on Lonsdale Street. Next week, the truffled choux pastries will be on the menu, and the week after that John will launch his truffled chocolates.
