The 2015 Truffle Festival continues to light up Canberra’s warmer months, and with so many events across the city that it’s hard to know where to start!

Perhaps the best way to get acquainted with this local produce is to join a cooking lesson with one of Canberra’s amazing chefs in order to learn some of the secrets of truffles. Armed with your new knowledge, you’ll have a deeper understanding of the origins and flavour to ensure you’ll be an expert at the next dinner party or dining event!

This weekend, Westfield Woden and Belconnen provide an opportunity to get a great insight into truffles through cooking demonstrations with two great friends of OutInCanberra – Damian Brabender from Sage Dining Rooms and Matt Breis from Pod Food Pialligo.

On Saturday, Damian takes the reigns at Belconnen and brings his incredible talent to the stage as he demonstrates how to create Egg yolk and Truffle Ravioli, as well as an exciting dessert of Truffled Ice cream and Popcorn. Those lucky enough to have experienced Damian’s creativity and energy for cooking will know what to expect.

With exceptional technique and a fabulous instinct for flavour and presentation, you’ll be amazed by how accessible Damian can make great cooking seem. Be sure to catch his demonstration from 11.00am on Sunday morning at Belconnen Westfield.

Matt Breis has demonstrated some exceptional technical skills since taking over the kitchen at Pod Food Pialligo. With focus on local ingredients, Matt creates a showcase of the ingredients to ensure their best qualities are brought to the fore.

At Westfield Woden, Matt will treat you to Truffled Barley Porridge and his own Truffled Ice cream. By using precise temperature control and clever planning, Matt’s recipes will wow your friends with the minimum of effort… It’s all about preparation, preparation, preparation!

There will be plenty of time for you to ask questions of the chefs. Both these sessions are free, and you can buy some truffles to take home and test in the kitchen for yourself!
